This is such a great vegan Instant Pot cookbook. I'm not even sure why I look at other books, when I cook 90% of my meals right from here! Some of my favorite recipes are the red curry (either soup or main), the sesame tofu, and the lentil soup. I also love this book for the basics, like rice and beans, because I know make them all from scratch instead of buying beans in cans. Highly recommend this book for all cooks, vegan or not!

After checking out a library copy and completing it I bought a copy to give it a permanent place in my personal library. I refer to it often. If you are a Vegan or trying to become one, or even if you aren't a Vegan, but you have a pressure cooker (nearly indispensable kitchen tool) I highly recommend this book. The tips and charts and recommended measures for all sorts of individual foods and whole meals that can be prepared using a pressure cooker are made easily accessible and digestible by this knowledgeable and expert author.

This book is good for anyone, vegan or not. It not only contains cooking times and charts for beans and grains but also has recipes for any occasion. It has a how-to section at the start of the book where it shows you how to actually USE electric pressure cookers and it demonstrates how versatile they can be. I use my pressure cooker at least 2-3 times per week to make big batches of beans, grains, soup, etc. and this book is invaluable. I know that electric pressure cookers can seem daunting if you're not familiar with them but, with this book, you don't need to be a chef. Just follow the directions and it comes out perfect every single time.
